These delicious and great looking cookies are made of layers of brightly colored, almond-based Italian sponge cake, raspberry jam, and a chocolate coating. This green, red and white variety of the confection originated in Italian communities in the United States during the 1900's, in homage to the community's heritage as a reminder of the Italian Flag. Not only are they beautiful and make great gifts but they are also incredibly tasty!
