Tuscan Cantuccini (Biscotti). Tuscan Biscotti are one of the most known traditional italian cookies in the world. They were first made in Prato, an ancient town near the beautiful city of Florence. They are wholesome and delicious. In Italy they're served as a dessert and paired with a glass of Vin Santo, a sweet wine produced from semi dried grapes which are slowly barrel fermented and then aged in small wood barrels. Brutti ma Buoni (Ugly but Tasty) cookies. In 1875 one very smart Italian Baker came up with this cookie by putting together whatever ingredients he had on hand at the time. It quickly became a favorite among kings and queens and even famous composers like Giuseppe Verdi. It can be made with hazelnuts, peanuts or macademia nuts. It goes great with coffee, tea, ice cream, hot chocolate, wine or even just by itself in all its splendor :)

This dessert combines a flaky and home-made sweet puff pastry,fresh lemon curd, all wrapped in the beautiful shape of a mock braid. This cookie was invented by one of the chefs of the Savoia family. He was challenged by the king to make something outstanding and this is what he came up with! It's made with almond flour and a chocolate filling. To give it even more of a kick it's also drizzled with melted chocolate on top. Absolutely irresistible!

Ricciarelli are a traditional Italian Cookie with origin in the Tuscan city of Siena dating to the 14th century. Legend holds that they were introduced by Riciardetto della Gherardesca in his castle near Volterra upon his return from the Crusades. Made entirely of Almond Meal they take a long and laborious process but they are incredibly delicious. A must try!

These delicious and great looking cookies are made of layers of brightly colored, almond-based Italian sponge cake, raspberry jam, and a chocolate coating. This green, red and white variety of the confection originated in Italian communities in the United States during the 1900's, in homage to the community's heritage as a reminder of the Italian Flag.
